Looking for something that’s healthy, but tastes great, too? Mark Bittman of the New York Times suggests a stir-fry dish with shrimp, black beans, and greens. This is a great suggestion for someone looking to lose weight but not taste.
Black beans (actually fermented soybeans) and are very cheap, about $1 per bag. When fermented, they soften and become bitter tasting, but they completely transform the entire taste of the dish. They should be added to the pot last. What you want to do is sauté the shrimp in soy sauce or other Asian sauces, and add some garlic. Remove the shrimp before they are completely cooked, then add whatever greens you desire to the pot. After you put the shrimp back in the pot, add the soaked black beans for only a few minutes.
Besides the dish tasting great, it is also good for you. Black beans have up to 15 grams of protein and fiber per cup, according to whfoods.com. They are also low in fat and rich in omega-3 fatty acids, vitamins, and minerals. This type of stir-fry dish also allows you to use whatever vegetables you want.
Any type of green vegetable will work in this dish, though Bittman’s personal favorite is bok choy. Shrimp is also a lean food that has lots of the vitamins and minerals you need without the saturated fat and cholesterol of red meat. To watch Bittman’s demonstration for this meal visit NY Times.
